Super Easy Fudgy Chocolate Cake with Marshmallow Creme

Anything homemade ultimately tastes better and is way more impressive than a box mix. However, usually mentioning a recipe is “homemade” makes people become nervous and think they can’t do it. Trust me, you can do this, and it will be impressive.

Ingredients for Cake:
  • 2 cups sugar
  • 1 ¾ cups flour
  • ¾ cup cocoa
  • 1 ½ tsp baking powder
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 eggs
  • 1 cup buttermilk
  • ½ cup butter, melted
  • 1 tbsp vanilla extract
  • 1 cup hot coffee (or 2 tsp instant coffee in 1 cup boiling water) or 1 cup boiling water
Ingredients for Marshmallow Crème:
  • 1 cup of sugar
  • 6 egg whites
Directions for Cake:

Preheat oven to 350 degrees. In a large bowl combine sugar, flour, cocoa, baking powder, baking soda and salt. Add eggs, buttermilk, melted butter and vanilla extract. Hint: if you do not have buttermilk you can take a cup of milk and add a tablespoon of lemon juice and let sit for a minute. Beat ingredients together until light, fluffy and well-combined. Add 1 cup of hot coffee and stir together. Spray two 9-inch baking pans with non-stick cooking spray, and pour batter into the two pans evenly. Bake for 30 to 35 minutes or until toothpick stuck in center comes out clean. Cool completely.

Directions for Marshmallow Crème:

Beat 6 egg whites with a mixer until it turns into a meringue consistency with stiff white peaks. Then add sugar slowly, still whipping egg whites. This makes a delicious filling in between the two layers of cake, or you can leave it on the side as a delicious dipping crème.
