Foodie: Chickpea Salad with Citrus Zest, Mint, Parsley and Walnut Oil


This salad is ideal for picnics in the park or just parking it on the couch. The whole dish comes together effortlessly as lemon and orange zest give this salad some pluck. Fresh mint and parsley perfume the mixture with sweet walnut oil stepping in for olive oil, adding nutty character to this dish. There’s nothing fancy here, just the clean, bright flavors that speak to summertime suppers.


Chickpea Salad with Citrus Zest, Mint, Parsley and Walnut Oil

Serves 2


1 (15 ounce) can chickpeas, drained

1/4 teaspoon of kosher salt

6 turns of freshly cracked pepper

2 teaspoons of walnut oil

2 teaspoons of lemon juice

1 teaspoon lemon zest

1 teaspoon orange zest

1 tablespoon roughly chopped mint

1 tablespoon roughly chopped flat-leaf parsley


Drain chickpeas and mix all of the ingredients in a bowl. Cover and chill in the refrigerator for 15 minutes and serve.
