A Healthy Twist on Breakfast: Apple Jack Quesadillas

While breakfast is the most important meal of the day, the usual choices we succumb to are pretty stale. Oatmeal and grits, pancakes and waffles, sausage and bacon ... yawn. But here's an idea: the fruit and cheese combo isn't just for party platters. Try spicing up your morning meals with this twist on a Mexican-style favorite. The appropriately named "Apple Jack" quesadillas are a healthy favorite to add to your new arsenal of quick breakfast creations.


Apple Jack Quesadillas

Ingredients:
  • 4 teaspoons extra-virgin olive oil
  • 4 tablespoons pepper jelly
  • 4 (10-to-12-inch) whole-wheat flour tortillas
  • 2 cups shredded Monterey Jack or Pepper Jack cheese
  • 1 McIntosh apple, quartered, cored and thinly sliced


Directions:
  • Preheat a teaspoon of the extra-virgin olive oil in a nonstick skillet over medium heat.
  • Spread 1 tablespoon of pepper jelly on a tortilla and place it in the pan, jelly side up.
  • Cover half the tortilla with about 1/2 cup cheese and 1/4 of the apple slices.
  • Fold the naked half of the tortilla over and cook for a couple of minutes on each side until the quesadilla is brown and crispy and the cheese is melted.
  • Keep in the oven while you make three additional quesadillas. Cut each quesadilla into four wedges and serve.

To freshen up the recipe, use different types of cheeses and apples!

Crush Crazy: Easy Ways to Make Your Move


You’ve seen him lounging around the neighborhood pool. You’ve made eye contact all over town. You’re pretty sure he’s into you and you’re definitely into him… so what’s the next step on your quest for love? Coming into the late summer, it’s finally time for you to make your move from summer crush to summer fling. Without making things too serious, these casual date ideas are the perfect way to catch your guy’s attention and keep him coming back for more.

1. Take him on a fun outdoor adventure. Most guys love to be active. Let’s face it- they love to show off their athletic ability and/or muscular build. Explore local trails on an outdoor hike, challenge him to a race around the lake or spend the day roller blading around town. Show him that you aren’t afraid to sweat!

2. Host a casual group party. Parties and large get-togethers are usually the easiest situations to turn up the flirt. Have friends over for a barbecue, bonfire or a couple hands of cards. By hosting your own party, you have control over who you invite (keep the guy/girl ratio is similar) and what activities you do. It also gives him the chance to compliment you on being such a great host.

3. Get your hair wet at the beach. Grab a cute and casual outfit, rock the beachy waves and jump in the water! Guys love to see active girls enjoying themselves in the sun instead of just laying on their beach towels. Sand volleyball, throwing a football or Frisbee and hitting the waves on a surfboard are all great ways to get his attention fast.

4. Ask him out for ice cream. Nothing says casual flirtation like a trip to the local ice cream parlor. It’s also a great way to beat the heat and show him that you aren’t afraid to splurge every once and a while. If things are already getting serious, try offering to split a sundae. See if you can beat him to the last bite!

5. Break out your cutest swimsuit and spend the afternoon at the pool. Show off all the time you spent being active and enjoy some quiet time at the pool. If you break out an intriguing novel or accidentally play your iPod music a little too loud, he may wander over with an easy conversation starter. If he so happens to be the lifeguard, casually cast a few splashes his way and flash your best flirty smile.

The most important, clichรฉ tip for romantic relationships is to show him the real you. Guys, unlike many women, aren’t usually into the unnecessary drama. If you show him what makes you stand out as an incredible and unique woman, he is sure to appreciate who you are as an individual. If he doesn’t, he’s not worth it anyway.

From Hooking Up to Dating: The College Girl's Guide to College Love

If we could define college dating in Facebook terms, I feel like almost everything would go under "It's complicated." But if your friend tells you that "it's complicated," we always want to know more. So how can you tell what she means when she's talking about her new guy?


"Talking"
When you're talking to a guy, you might not even know if he likes you back yet. If you do know he likes you back, but you've only been hanging out and haven't gone on many real dates, you can still say you're talking to the guy. Either way, you're testing the waters and at least one of you is probably not 100% yet on whether they want to take the dive. Get to know the guy, and just enjoy the fact that you guys are hanging out.

"Dating"
Maybe you've had the talk about giving yourselves a label, but maybe you haven't. Either way, you've gone out with the guy more than a few times and hang out regularly. However, even if you've labelled yourselves as boyfriend and girlfriend, usually this is still in the earlier phases of the relationship.

"In a Relationship"
After you guys have been going out for awhile AND you've had the talk about becoming exclusive, you can officially say you're in a relationship! Revel in the idea that you have a guy who (hopefully) loves you and only you.

"Hooking Up"
Hooking up doesn't always mean doing the dirty, although in many cases it can. If you've hooked up with someone, it could simply mean that you made out with him (or her). This one's a little tricky! Hooking up could be a one time thing or an ongoing act.

"Friends With Benefits (FWB)"
Friends With Benefits (FWB) probably means that they are sleeping together at least semi-regularly, but don't want a relationship with each other. This is a dangerous one to get into, especially if you like the guy! Although it may work for some people, it could be a disaster.

There are very few people who haven’t heard of The Beatles. Commonly referred to as the Fab Four, these young men from Liverpool took the music world by storm. In 1967, The Beatles released their "Sgt. Pepper’s Lonely Hearts Club Band" album. According to Rolling Stone magazine, this record is “the most important rock and roll album ever made... by the greatest rock and roll group of all time.” Even if you’re not a huge fan of their music, their popularity and legacy is totally undeniable. Nail DIY: Nails for the Office


When it comes to the professional world, a good manicure can say a lot about your work ethic, style and personality, which is why it is so important to learn the ins and outs of office-appropriate nail polish. Following the trends is fun, but sometimes it’s better to leave a distracting manicure at the office door. This doesn’t mean you can’t have fun with your nails, because there are ways to get around professionality. Let’s talk through it!

If you’re talking with clients and/or other business professionals, you want them to pay attention to what you are saying, not what your neon nails are screaming. You want to be taken seriously, and for that to happen, your manicure can’t hold you back. If people can’t concentrate because of your bold bejeweled fingernails, then there is a problem. If you work in an environment where nail art creativity is encouraged, then how lucky are you! First, make sure that your workplace actually allows nail polish as some businesses require their staff to have naked nails.

If you’re having trouble deciding what polishes are appropriate for work, take a look at the hot colors and trends for fall here. All of these options are tame enough to be worn in a professional environment.


Keeping your nails trim can make a big difference in an acceptable manicure vs. an unacceptable manicure. If your nails are quite lengthy, take it easy on the brightness of your color choice. Those of you with shorter nails can get away with more because there is less for others to see and be distracted by. Dagger nails are a statement all by themselves, so choose wisely between length and color. Just a reminder: nails can always grow back.


One rule to paint by is to know that typically, the hottest color of the season is an acceptable polish choice. Use common sense though -- if the hot color is neon yellow, would your boss be able to make it through a staff meeting with your blinding nails staring from the swivel chair across the room? That bright red is a bit daring, but pair it with the right outfit and your office-mates will be wondering what you did differently that morning...


Lucky for me, my college professors could care less what I put on my fingertips, so my options are limitless. If you’re just making the transition from college life to the professional world, the lines of polish acceptability may be unclear, so stay true to these and you can’t lose!


I chose to try the funky French manicure in a deep maroon color: needless to say, I’m ready for the leaves to change. Finally, a French manicure for people with short nails! Remember, if you’re trying this one, it’s a funky French, so really go for those skinny lines in fresh colors.




Don’t forget to wait for the first two coats of polish to dry completely before applying the French manicure stickers! Have fun combining the new trends with the office environment... you never know what you might come up with!

Back to School: How to Organize Your Laptop


We all know that keeping things organized during the school year is tough. This goes for every aspect of our lives. However, too often we will let our digital files get wildly out of control. With virtually everything in class these days happening on our computers, we don’t truly realize how easy it is to lose track of files until we’re scrambling at the very last moment to find them amongst a sea of documents.

So, what’s an unorganized college girl to do? It’s hard enough keeping things together in a dorm or on a desk, so the task may seem daunting at first. Luckily, there are tons of things to do to prevent technological disarray. Here’s how to fix digital organization problems -- and even prevent them from happening!

This is done most easily if you’ve bought a new computer for the new school year. That way, you can train yourself to organize while you create new documents, so the problem never occurs. If you’re already in a bind with file overload, no worries. Old dogs can, indeed, learn new tricks. But first thing’s first: make folders. It doesn’t matter how you remember things and keep them separate -- just make sure you do. The most common problem is having files from different categories mixed together. How can you expect to find your American Literature midterm in the middle of your iTunes shopping spree? Last time I checked, Justin Bieber and F. Scott Fitzgerald don’t have too much in common ... so just make folders for everything individually.


The next step is ... you guessed it! More folders. Now, you don’t have to have sub-sub-sub-folders for things, but if you have a lot of things, you’ll be needing to keep everything separate. Make a folder for your assignments for both the spring and fall semester, and separate those from your assignments the subsequent year. If you can, get rid of unnecessary files each time you have a new term, unless you have super important notes you can use in the future, or you just want to be able to refer back to some of your old essays. “Getting rid of” doesn’t have to mean deletion, either.

A very wise investment for college would be a portable hard drive. These are especially helpful for backing up all of your files in general, as well. You never know when surfing on an unsecure network at the local coffee shop could end up giving your computer a nasty virus that requires you to restore your entire system to factory settings. Back up as often as you can so you won’t lose precious documents. Having a portable hard drive makes this extremely easy and also allows you to delete old, useless files and free up space all while keeping them on the side.


Try not to throw too many junk files in with your important ones. You may end up with the same situation you started with if you do this. If you absolutely have to save every list you saw on a random site or a document full of Chanel quotes, make yet another folder specifically for your random antics. Just always know exactly where everything belongs, and group together things by their similarities so it makes finding them easier.

Last but not least is the importance of naming your files as specifically as possible. Sure, “theater hw” may be an acceptable name to you the first week of school, but after stacks and stacks of “theater hw1” and “theater hw2” you may grow weary of the vagueness you allot to your files. Make sure there will be no doubt in your mind about what’s inside of each file or document. Give it a definitive title, a tag, and even a date, if possible. That way, you’ll never be confused about what you’re clicking on. While it may seem a drag to type out so much for a simple name, you’ll be thanking yourself later. After all, your computer is your friend!

Tackling an organization task like managing your digital files may seem scary at first, but the thing to keep in mind is yourself. What works for you? What can you do to make things easiest for you? With these questions in mind and the advice above about taking on the job, you should be well on your way to having complete and total control over the organization of all of your digital data.

5 College Theme Parties and How to Dress for Them


If you party in college, you're bound to run into some theme parties. Here are five our favorite theme parties, and how to dress for them:

ABC (Anything But Clothes)
Don't worry, we don't mean a naked party. For this party, you need to create your outfit out of materials other than clothing. You can use trash bags, paper, maps, bed sheets, towels, and pretty much whatever you want. Get creative!

Toga Party
Toga parties come straight out of frat party legend. It's fun and actually pretty comfortable to be dressed in bed sheets. To prevent any indecent exposure, wear a strapless tank or bandeau and short shorts, then use this tutorial to wrap yourself in a toga. Take your favorite brown or gold belt and wrap it around your waist to keep the toga together.

Highlighter Parties
All you really need for a highlighter party is a white shirt and some highlighters!  This party will usually have black lights, and everyone will be drawing all over each other.


Ugly Sweater
When the weather grows cold, this party outfit will not only be fun and easy, but will keep you warm. Almost everyone has an ugly Christmas or holiday sweater. Take your very ugliest (you know, the knit one with Rudolph on the front) and rock it.

High School Stereotype
Use this opportunity to be someone you weren't in high school! Although most people probably didn't fit into the typical high school stereotypes anyway, play up the stereotypes you see in movies. Were you a nerd in high school? Go as a jock. Were you queen bee? Why not try the goth look?

Three Mexican-Style Dishes to Make in 30 Minute or Less

Mexican-style dishes are some of the easiest meals to create with the least amount of money. For a college student on a budget, Mexican meals provide unique and rich flavors that will leave you and your wallet full.
Mexican Soup


Ingredients: 
  • 2 (15-oz.) cans corn, drained 
  • 2 (15-oz.) cans black beans, rinsed 
  • 2 (14-oz.) cans tomatoes, diced 
  • 4 cups beef broth or 4 cups chicken broth 
  • 1 tsp. cumin 
  • 1 pinch garlic salt, to taste 


Directions:
1. Combine all the ingredients into the pot, and let it simmer for 20 to 30 minutes.
2. To serve, fill sides of the bowl with baked tortilla chips, and put soup on top of them. Add a scoop of low fat sour cream, and top it with shredded cheddar cheese.

Chicken Chimichangas


Ingredients: 
  • 1 lb. chicken breast, boiled
  • 4 tortillas 
  • 1/2 cup sour cream 
  • 1 cup Mexican cheese, shredded 
  • 1 tbsp. adobo seasoning oil(for frying) 

Directions: 
1. Boil the chicken until it’s cooked. 
2. Pull the chicken apart or cut it into strips. 
3. Mix the sour cream and 1/2 cup shredded cheese together.
4. Heat tortillas for 45 seconds in the microwave. 
5. Spoon 1/4 cup of sour cream/cheese mix, 1/4 of the seasoning and 1/4 of chicken onto center of each tortilla. 
6. Fold in the two opposing edges of tortilla - 1 inch each, then wrap one unfolded side beyond the middle line; and finally, bring the last unfolded side over top of the other three folds. 
7. Put the folded side down in frying pan with heated (med/med-hi) 1-inch deep oil. 
8. Let brown for 5 minutes, then turn over and brown other side for 5 minutes. 
9. Put it into a 400ยบ oven for around 5 minutes, then sprinkle the remaining cheese on top of each and let it melt (about 5 minutes).

Mexican Dip


Ingredients: 
  • 1 (16-oz.) can refried beans 
  • 1 (16-oz.) can Hormel chili without beans 
  • 1 cup sour cream 
  • 1 cup mayonnaise 
  • 1 (1 1/4-oz.) package taco seasoning mix 
  • 2 medium tomatoes, diced 
  • 1-2 green onions, sliced 
  • 2 cups medium sharp cheddar 

Directions: 
1. Layer the can of refried beans on the bottom of 13 x 9 serving dish. 
2. Top it with a layer of Hormel chili. 
3. Mix the mayo, sour cream and taco seasoning together, and layer it on top of the chili. 
4. Layer it with shredded cheese, followed by tomatoes and green onions. 
5. Chill it until it’s ready to serve. It’ll go great with tortilla chips, pita chips or crackers! 

Bring the authentic food of Mexico to your place by cooking up some of these Mexican-style dishes!
